1. On Location And Behind The Scenes At ROCKSALT
2. ROCKSALT’S Mission
ROCKSALT is all about local sustainable food, and that includes seafood from Croxton’s own oyster and clam farms. They champion the local farmer and continuously work to educate their staff and customers. The food at ROCKSALT is a celebration of Mid-Atlantic seafood with a focus on the raw bar, with shellfish from Croxton’s Virginia-based Rappahannock River Oysters!
3. Meet Owner, Travis Croxton
Travis Croxton is the co-owner of Rappahannock River Oysters, several oyster farms throughout the Chesapeake and a clam farm in Chincoteague as well as the proprietor of ROCKSALT and BRINE. He has earned several awards, as well as recognition as a culinary innovator. Travis along with co-owner and cousin Ryan Croxton has been credited with helping to rebuild the Virginia oyster industry and leading a renaissance of oyster farmers in the Chesapeake Bay.r
4. Farm To Table
Reflecting the best of what’s local, ROCKSALT – like it’s sister restaurant in Charlotte – has a menu unique to its location. This farm-to-table oyster bar serves sustainable seafood and land-based dishes that never fail to satisfy. Owner Travis Croxton hopes to redefine the way our communities eat and support local farmers by leading through example.
5. The Oysters
ROCKSALT always has four or five varieties of oyster to enjoy! These range from the sweet and buttery Rappahannock oysters on one end of the flavor spectrum to the salty and briny Olde Salts on the other, with the mild and briny Stingray oysters offering a happy medium between the two extremes. The staff are very knowledgeable and can help you pick just the right oyster to satisfy your palate.
6. The Sea Scallops
ROCKSALT’s Sea Scallops are a delicious entrée served atop a bed of Parisian gnocchi, grilled octopus, shellfish broth and kale. Paired with a good white wine, this is what great seafood is all about!
7. Wood Rotisserie
ROCKSALT’s wood burning rotisserie slowly cooks your meal to perfection, leaving it popping with smoky fired flavor. Choose from the seafood (always a seasonal selection of fish) or the chicken and watch from the dining room as your meal is prepared!
8. The Outdoor Bar
The outdoor seating at ROCKSALT is just right for enjoying the beautiful weather in Charlottesville while sipping on cocktails and sharing a platter of oysters with friends!
